one of the many benefits of being married

Tonight I had some friends from my college fellowship AACF (Asian American Christian Fellowship) over for dinner. It was SO much fun! Some of them I hadn't seen in a while, and others I see at church functions various times a week...but man, there was so much laughter and just too much catching up to do! I spent a lot of time figuring out what to make for dinner, going to Fresh n Easy and Wal mart (and going down the aisles freaking out because I'm not used to grocery shopping for food, having to pray because of my insecurities with cooking) and made some testers so when Kevin came home he told me which he liked most, and I made those right before everyone arrived.

It is SO nice being married because we get to invite people over and minister to people more often now! Can you imagine-all those hours wasted during the "dating/engagement" period? Now we live together, and in a beautiful home, and can invite others over! HUGE PLUS TO BEING MARRIED (and good for me, to practice hospitality and serving by cooking/cleaning). Can't wait to have more people over for future dinners/parties :) I love my friends!



That's a picture of me trying to figure out how to make my Oreo Truffles pretty! The milk chocolate chips melted nicely but the white chocolate ones were a FAIL. Pasty, looked like mashed potatoes, and the reason is because it's not really chocolate- it's a sugar base! Didn't know that, lesson learned! Amanda and Jamie tried this method of double boiling and I also learned a new way to melt chocolate!

What was served for dinner:

  • Ceasar Salad
  • Cheddar Biscuits (found a recipe on Pinterest, which is similar to Red Lobster's biscuits!)
  • Garlic Parmesan Chicken 
  • Oreo Truffles
  • Chocolate Covered Strawberries (well...since the white chocolate was strange, it was just strawberries)
  • Drinks: Water, Coca-Cola, and Orange Juice
What I also made earlier but Kevin said wasn't as good was Monterey chicken. I also planned on making some Sweet and Sour Meatballs but lost the recipe, which was fine because it was a limited amount of time to get everything ready.

Two friends asked if they could bring some food, and my initial reaction was like "NO NO YOURE GUESTS, I'LL HAVE FOOD FOR YOUUU..." but since it was my first time serving a legit dinner, this was NOT the time to be putting too much on my shoulders because of my pride, thinking I could do it all...; plus I was afraid that I wouldn't have enough for 8 of us....So they graciously brought a broccoli dish and some pulled pork! YUMMAY!!!

Seriously such a fun night. I'm also amazed at how long it takes to wash all the dishes and keep the kitchen clean.

Poor Kevin and Michael have papers due tomorrow. And they both go to work in like 2 hours. And they are both passed out as I type this blog. I'm going to have to wake up my husband before I go to bed because he needs to finish his homework lol Goodnight! I have class in 4 hours too. We are all crazy in this house!

A little over two years ago, I was crying to my cousin because I had just found out I was suffering a miscarriage. Not only was it a miscarriage of a baby whom I was losing, but it was also the loss of a twin that Elianna would not grow up with. Our "New Normal"

Evangeline has been home with us for almost a month now (already?!) and we've finally created a routine...it's a "new normal" for all three of us! Currently life consists of drawing up medications, breastpumping, cleaning bottles/breaspumping accessories/syringes, feeding our baby and changing diapers. When Evangeline was born at 6 months gestation, our routine consisted of us going to the NICU for 88 days. It was exhausting and difficult, but it was the only way to see our baby (we can't stress how thankful we are that she's home!) And well, just as we got used to this "new normal," I'm going to have to get used to another "new normal" in about 2 weeks! Why? Because Kevin will be going back to work, since his paid-time off will end soon! Honestly, having a baby is already life-changing as is. But to have a baby with special needs is a lot of work! For those of you who didn't know, I've actually become a consultant for Beautycounter, a skincare and cosmetics brand that stands out for its mission to get safer products into the hands of everyone.
